Is there a way to declare a variable in a query – like if I have to use a recurring date many times in my query and don’t want to enter it over and over?

Since you're a newbie, I won't do my usual and write this in Spanish. This forum is for Excel questions in Spanish, Swedish, French, Italian, Romanian, Dutch, Turkish, and so forth I think you'll have much better luck posting your question in the Access forum. There are lots of folks there that are good with SQL (alas, I am not among their number).
