Pivot Table - Calculate a Calculated Field, Grand Average instead of Grand Total, Month instead of month # in year

This is like a 3-part question - I am attaching a screenshot of what my table looks like and the questions I have numbered are tied to the spots on the screenshot.

1. You know on Pivot Tables how it creates a grand total by default, does anyone know how to make a grand average?

2. How do I change the month # to read as an actual month?

3. This is where I got really stuck, how do I calculate a simple percentage between two [count] fields? These fields are calculated in the sense that they are counts from the dataset. I am guessing I can do something on the data table to get the Pivot Table to have a '% Complacency' column that it references, but I would prefer it to be more streamlined and within the Pivot Table itself since I plan on making it into a Pivot chart.

I know how to do many of these things when I am working with a regular excel data set but with a Pivot Table I get hung up, and it's even more difficult to find anything on-line to help solve my problem.
