After the latest O365 update, the formula bar looks mangled to the point of being unusable. The attached picture shows a sample formula from one of my spreadsheets. The upper formula is as Excel shows it. The lower is that same formula copy/pasted into Kate (a programmer's editor).

This seems to "take effect" after the file has been open for a while, and becomes readable again if the file is closed and reopened. That's an annoying workaround, as this is a huge spreadsheet (a bit under 50meg) and lives on a network share drive.

Any ideas how to fix this? For instance, is there a way to set the font used in the formula bar? Setting it to a non-kerned font like Courier New could have a salutory effect, but I've not seen how to set this. or is there a known "fix" action...?

That exact problem already started in 2023, where MS afterwards stated to have solved it, but I have seen more examples now, where the same problem are reoccured again (as your's). Some solve it as I proposed in #5, and other still have the problem. So my own guess are, that it's in combination with other MS Software, installed. Have you tried to remove 365 fully, and reinstall it ?
