Data recognition and extrapolation

If this has been answered a million times before, please feel free to link me to an appropriate thread.
In the most simplistic way I can think to say, I regularly receive many different types of census forms and it is my job to take that information and put it into the correct format that out company uses. It’s all basic information (first name, last name, DOB, Zip, etc.), but it’s never in the same order or in the same format. Examples pictured.
I’d like to know it there is a way that Excel can recognize these formats and automatically import these into the form that we use.

Workdays for a market open Mon, Wed, Friday?
Yes! Use "0101011" for the weekend argument in NETWORKDAYS.INTL or WORKDAY.INTL. The 7 digits start on Monday. 1 means it is a weekend.
