I have an Excel Workbook that has been compiled into an .exe. It has a custom ribbon that works fine. When I close that app the custom ribbon remains. Is there a way to load a default ribbon when I open Excel after using the app?

Ctrl+S is used for Save. Ctrl+5 is used for Strikethrough. Why Ctrl+5? When you use hashmarks to count |||| is 4, strike through to mean 5.
When you say

do you mean that is an executable done by a third party compiler? If that's the case and the .exe is changing the user interface then the change is application-wide. As far as I know without access to the original workbook to modify the XML code you can't change it.
