Countif formula for dates

Whats the formula i need to type to do a count of dates that are less than a fixed date?

Ie if i have todays date (=today()) as my formula and then do a separate formula to get the date that was 10 days ago, i want a formula that will count the dates that are older than the 10 days.

Hope that makes sense
