In office 365, there's this new function that looks exactly like the comment function but it's not.

Is there a keyboard shortcut to edit the comments for this type? Usually shift+f2 works but not for this:

Excel Facts

Add Bullets to Range
Select range. Press Ctrl+1. On Number tab, choose Custom. Type Alt+7 then space then @ sign (using 7 on numeric keypad)
Google says select cell and then Shift+F2 for Office 365

In other words, It won't show an 'Edit' option unless you have already entered a comment previously

shift+f2 precisely doesn't work under 365. it used to work in all other office editions.

The old comments have been rebadged as Notes and Shift+F2 will work on those.
- these are still the ones to use for documenting spreadsheets
The new comments are "Threaded Comments"
- these are more about collaboration & conversation. It sounds like you have these in your spreadsheet and Shift+F2 does NOT work on these.

We have had a previous discussion on this and differentiating between the 2 using VBA in the Forum here:
Understanding Worksheet.comments.count

It includes the below:-

yes, so is there a way to edit threaded comments? what's the keyboard shortcut or how do I set one?

I don't think you can edit the threaded comments.
Yes you can. I would argue you shouldn't be allowed to edit anything other than the last item in the conversation since editing a previous message could undermine the conversation built on it.
