if I have a huge list of zip codes and need the one or two zeros to appear as text format, is there an easy way to add them as opposed to going down the list manually and keying: '0 or '00?
Assuming you are working with 5 digit zip codes, if you just want them to appear that way, you can simply use a Custom Number Format of "00000".
If you physically need to value to change, you can use a formula like:

=REPT("0",5-LEN(A1)) & A1
to add the zeroes.
You can do a Copy -> Paste Special -> Values if you then want to change that formula to hard-coded values.
