I just noticed that each entry on my Watched page has a checkbox labelled "Email". What does that do?

Probably if you elected to get email notifications if there were responses to those threads in your watch list.
I add items to my watch list all the time, by opt to not have any email notifications in regards to them.

@Joe4 is right. Those are the threads you opted to receive email notifications (or automatically opted in to receive email notifications due to your account preferences). If you don't want to receive email for some content in your watched list, then you can select the corresponding checkbox and select "Disable email notification" in the drop down at the bottom of the list and click Go. You won't receive emails for those threads you selected anymore.

"Watch content on creation and interaction" (creating a new thread or replying an existing post) is set up to "receive email notifications" as default. If you don't prefer to receive email notifications for any thread that you'll be posting then you can clear the "and receive email notifications" checkboxes in your account preferences.
