I'm using a sheet that has a column of + signs in the margin to the left the sheet and when you click on them they expand rows on the sheet. You can click them again and it collapses them. What are they called and how do I add these to a new sheet?

It is called grouping and can be found in the Outline tab of the Data ribbon (Excel 2007 on). Simply select the rows you want to group, click the Group option from the Outline tab and click Group again.
