Volume tracking

Hi,

I am trying to create a way to track volumes for orders received for multiple products against orders completed on a daily basis. I do not need to track the order details, just the overall number received/completed for a day. I currently have 3 sheets -

1. Orders received (table with list of items on the left and days along the top)
2. Orders completed (same as above)
3. Summary sheet showing volume in, volume out and number outstanding.

I am hoping you can help with the following questions -

1. Can I track daily volume on one sheet instead of two without adding too many rows and columns as there are quite a few different products being tracked.
2. Is there a way for me to track if orders are being completed within a target time e.g 1 or 2 days and how many items are outstanding from each day. The issue I'm having is that orders completed on day 2 may include outstanding orders from day 1. I need it to be as easy to input as possible and I don't want to have to be changing the numbers completed for previous days as I will lose track of which days items were not completed originally.

My main issue is making it as easy as possible for the users to input data.
