Using Multiple Windows on a Mac

I have a spreadsheet with two tabs - one for internal use and one for presentations. I thought I could open up the internal tab in a new window and use that window on a second monitor while sharing the other window with my remote guests. This would theoretically allow me to make changes on the internal tab that the guests cannot see, but the results would show up on the presentation window.

What I have discovered is that the New Window seems to be unresponsive, as if it is locked -ie I cannot adjust cells, change formats, etc. So, two questions:
1) Is the functionality of New Windows for the same spreadsheet limited?
2) Any suggestions on accomplishing my goal stated above in a different manner?
