Where can I find the keyboard shortcuts to use in Query designer? For example, how to add tables and create a join using the keyboard?

Excel Facts

What do {} around a formula in the formula bar mean?
{Formula} means the formula was entered using Ctrl+Shift+Enter signifying an old-style array formula.
Not sure that it's possible, unless you go into SQL view and enter the whole thing in SQL. I've only ever seen the query grid used as a click-and-point interface. I type only when creating calculated fields in the query.
