Using 3D reference to create graph

To preface this, I'm a total excel novice.

I create a chart of data on a weekly basis. I would like to create a graph to show the historical trends of certain cells in this chart. I've learned a 3D reference can be used to select the data from the same cell across every worksheet so I think that solves my largest problem, but I can't find a way to get this data into a graph. My thought is that I would need to at least compile all the data into a single table, but I don't know how to list the data in a single formula.

Once that problem is solved i think i will need to reorganize the data by formula. I think for simplicity since my date range will be constantly expanding I either need 2 dummy charts at the start and end, so their values will be zero, or I need to add new sheets in between sheets I already have, so the data will not pull in date order. So I either need to ignore zeroes if I use the dummy charts, or I need to reorder the date in date order, preferably with the ability to only select a certain date range or I will ultimately end up deleting my start and end sheets.

Use a custom number format of #,##0,K. Each comma after the final 0 will divide the displayed number by another thousand
