Trouble Creating Pivot Table

A few weeks ago my Excel 2016 simply refused to make a new pivot table, but only if I select a new sheet. If I choose Existing sheet I am good, but if I choose new sheet Excel stops working and tries to recover my data but fails every time. Is anyone else having this issue? I can't find anything online.

Excel 2016 Professional Plus
Windows 10 Pro
