Tracking several phase of several manufactured products

Wise people of the forum...
I am in need of a way to do tracking.
We manufacturer many different products for many customers. Each product needs to move through several phase of assembly.
We would like to move a product through assembly using dates.
I have looked at Gnatt chartd but all I can find is they only track one project. Our goal is to know what projects are going to be at each time starting with order placed, manufacture, ready for delivery, and installed.
The key would be an order # and or an address of installation.
Any help /ideas would be appreciated or a template to get me started...
