Our truck drivers are not allowed to work more than eight 12-hour days during a 30 day period, is there a way to track this?

You haven't given us any idea of how your data is structured, but perhaps a COUNTIFS function will do what you want. You can count based on person, whether the date is withint the past 30 days, and whether or not the shift was over 12 hours.
