Track Correspondence

I'm looking for a way to track correspondence (email or Direct mailing)

Example that I would like

on 12/1/17 Mailed to "David K", "Wanda S", "Bridgett C", "Dack T", "Hannah H".....etc.....
on 12/2/17 Mailed to "David K", "Steve M", "Chris P", "Ryan S", "Hannah H"

The names would be actual company names

Is there a way to have a formula on a new sheet that shows every date of the year in each column and every compnay/client on every row and have a function to show an X in the cell to match with my running total of all correspondence sent?
