Suggestions for Charting

I have 5 minute data for an entire year related to 5 different tank levels. I have been asked to generate a chart for the level for each 7 day interval of the year. Would this be a good use for a pivot table and then have a chart generated based on the pivot table results? This needs to be simple enough for the non-Excel user to select the desired start/end month and day to get the results and print the chart. I do realize the chart will be useless if the user selects too broad of a range but that is what is requested. Any suggestions on how best to approach this?

My initial thought was to have the data in a single sheet for the entire year with the MM/DD/YYYY HH:MM:SS in Column A and then the values in columns B - F. Then a separate tab for the chart. I had considered a dynamic chart since I am not that well versed in pivot tables, however that seemed like more effort than necessary if the pivot table is more capable.
