Selective Pivot Table

I have a dataset of over 35,000 rows, crossing multiple salesmen. I would like to build a Pivot table for only one of those salesmen. I know I can use a filter in the pivot table, however I do not want the salesman to be able to select another salesmans number to display sales, Cost, and GP. Is there a way to build the Pivot table for just one salesman number, out of the massive dataset.
