I am trying to select a total of 52 weeks in the Horizontal (Category) Axis Labels part in a graph. The problem I am having is it only shows 50 weeks then below it shows "..." I do not know how to select or deselect the other two weeks....Can someone help me?

What is showing you "..."? Where are you selecting the weeks from? Is it a contiguous range, or a bunch of disconnected cells? Note that using a contiguous range is always going to be easier to work with and more reliable than separate cells.

I have two sheets...in Sheet1 is my data so I have 52 weeks across from C2 - BB2. In Sheet2 is my graphs. When I right click on a graph and select "Select Data" the Select Data Source box shows up. In the left box "Horizontal Category Axis Label" is where my 52 weeks are. When I scroll down to uncheck the weeks I do not want to show. it only goes to 50 then after 50 there are 3 dots that show "..." so it will not show week 51 and week 52 to uncheck them from showing

If you click on the filter icon floating to the right of the chart, all of the categories will be available for you to select/unselect.

Alternatively, if you put your data in a range with week numbers in the first column and values in the next, and convert the range into a table (Ribbon: insert tab > Table), you will be able to filter the table, and all items in a column (up to 10,000 I believe) will be available to select/unselect. Any hidden rows in the table will not be shown in the chart.
