Whats the difference between CONCAT and CONCATENATE?
The newer CONCAT function can reference a range of cells. =CONCATENATE(A1,A2,A3,A4,A5) becomes =CONCAT(A1:A5)

Can someone give me a short explanation of merging the cells and the "how-to"? I appreciate it.

Well you select the cells and press the merge button on the formatting toolbar which is next to the button for right justification.

What are you actually trying to do?

Adjusting for limited Row Height

I have lists of numbers I am entering and after each one, I hit ALT + ENTER to "return" inside the cell. After 409.50 points I can not see my whole list anymore. My boss and our customers are requiring it in the same cell so I am trying to find another way to make this work.

Select the cell with the numbers in it and the cell below it. Right click, choose Format|Cells, on the Alignment tab check Merge cells and click OK. Set the row height of the first cell to the maximum. Increase the row height of the cell below so that you can see all your data.

That's a workaround, but I think you should tell your boss that lists of numbers should be entered in single cells in Excel. It's a spreadsheet, not a word processor.
