Ribbon customisation - how to find XML

Hello.

I received a file where a developer used Ribbon customisation.
I can see the additional menu, additional buttons and now I'd like to modify that.
The problem is I can't find any XML.
There is no code in VBA, there is no XML map, can't see any standalone XML, option "Preview Data in Task Pane" in XML Source pane is inactive.

Can somebody please help me understand where else I could look for it?
I use Office 365.

I used to open an xlsx file with a zip file utility and you will see a number of files one of which is the xml file, once extracted you can edit in notepad and replace it in the zip/xlsx file
