Ribbon changing appearance when pinned/unpinned

Hi All,
this is driving me crazy...
When I have my ribbons unpinned (aka show tabs) they appear like this - as they have always been, but as long as i move the cursor away they disappear

Although, if I pin them (aka activate the show tabs and commands option) they are shown as below, occupying more space and showing less options

I have always had at the same time the first view and the bar always visible. Also checked on another PC and this is not happening.
I tried to change the screen zoom but no effect
Running windows 10 and office 365 on a surface laptop 3

Thanks for any hint...you could save my mental sanity :P
 

Excel Facts

Format cells as date
Select range and press Ctrl+Shift+3 to format cells as date. (Shift 3 is the # sign which sort of looks like a small calendar).
