Protecting content in word?

I have what is a simple question but am unable to locate a simple answer, I have a word document which I would like to protect everything with the exception of 1 specific text value amount which needs to be free from protections.

How can I simple run protection up to this value, stop it, then carry the protection on.

Simple: Insert a formfield where the editable value is to go, then apply forms protection to the document. If only particular values are allowed, you might want to use a dropdown formfield; otherwise a text formfield should do the job.
