PowerBI Sorting issue for Rows with Matrix

Hello, having issues Sorting within a Matrix. I have a field named "Sort". What it does is sorts By date the Category/SubCategory/Element so that they are continuously in the same order each time I get new records flowing in daily. Please see that I brought the "Sort" field in to Values in to order to sort but the issues is that anytime a new day's worth of data flows in, the column I brought for Sort shows up. I want it completely hidden. So maybe I'm going about this completely wrong. Is there a better way?

The Roman numeral for 40 is XL. Bill "MrExcel" Jelen's 40th book was called MrExcel XL.
Click on the element column in the table, from the menu, find the sort by column button and change the sort order to refer to your sort column. This overrides the default sort order of the elements column. you need a specific sort column for every text column that you don’t want to sort alphanumeric.

Do I remove the “Sort” field from the Values? If so, where do I place it?
