Pivot table will not refresh

Hi Everyone!
I have a pivot table that is a rolling 6 weeks of how many people me and my colleague hire weekly. When I press refresh all the page refreshes but the data does not change. I have attached a picture. I am a amateur when it comes to Excel so please bare with me. I wanted to be able to refresh weekly(I know I have to manually refresh it) When I press refresh(both ways, by right clicking inside the table and by using the pivottable analyze refresh all) it does not give me an error, it just wont refresh.

It looks like the data is in an actual Excel Table.
If you are in the table and click on Table Design you should be able to see the table name.
In my sample it is called Table1.
If you go into PivotTable Analysis > Change Data Source does the dialogue box look something like this with the table name in the Table/Range box ?
If not can you put it there and then refresh the data.

If that is not the issue, the next question is are you using Power Query to get the data and does refreshing the pivot twice pull in the data ?
