Is there a way to make a pivot table consolidate a weeks worth of data? Currently it is picking up each day. Can it consolidate the days I have picked?

Yes...

1) Click on one of the dates in your pivot table.
2) On the menu, click PivotTable Analyze > Group > Group Field.
3) In the grouping dialog, select days and unselect months.
4) In the number of days box, type 7 and then click OK.
