Pivot Table - Need Help on Averaging Text fields

I need to use a pivot table to show the Average volume of patients with PAN Test that are high risk vs low risk.

I know I cant average a text but I cant think of how and I have tried to use a helper column but its not working for me.

Any ideas? Im a newbie.

Formula for Yesterday
Name Manager, New Name. Yesterday =TODAY()-1. OK. Then, use =YESTERDAY in any cell. Tomorrow could be =TODAY()+1.
