I am putting together a database consisting of 2 tables, :-

Table 1 - Employee details - (1st name, surname, Personnel no., Department)
Table 2 - Training details - Data training took place, title of training course, personnel no.

I have linked the 2 tables by personnel number.

In a form containing all fields from the 2, I want to choose the name from a drop down list etc. but when I import details to the form the names don't appear in alphabetical order (even though they are in the employees table)

Also, when I choose a name I want the personnel number to appear in the form relating to that person automatically.

Can Excel fill bagel flavors?
You can teach Excel a new custom list. Type the list in cells, File, Options, Advanced, Edit Custom Lists, Import, OK

How are you populating the Control Source of this field? You should be able to edit it to have that list sorted in the order you want.
