I have a data showing 4 variables that i would like to plot on a single graph.

Time: X axis (in 5 second intervals)
Temperature: Y axis.

I would like to plot

Target
Min
Max
Peak

is this possible in excel?
Maybe i need to reorganize my data?
 

Excel Facts

Will the fill handle fill 1, 2, 3?
Yes! Type 1 in a cell. Hold down Ctrl while you drag the fill handle.
I sorted the table based on TYPE and added MAX_, MIN_, PEAK and TARG to a series each.

You can rearrange the data like below using a pivot table and then create a sort of bullet graph:
