Is there a way to replace all formulas except subtotals? Currently I'm doing it manually...

Waterfall charts in Excel?
Office 365 customers have access to Waterfall charts since late 2016. They were added to Excel 2019.
Do your subtotals use the SUBTOTAL function?

In that case try
Code:
Sub tonyjyoo()
   Dim Cl As Range

   For Each Cl In Cells.SpecialCells(xlFormulas)
      If InStr(1, Cl.Formula, "subtotal", 1) = 0 Then Cl.Value = Cl.Value
   Next Cl
End Sub
This assumes that when you say replace, you mean convert to values
