I am working with a lot of bar graphs.
Rather than have the bars pointing down, how can I make the bars face up so that all my charts are consistant?

Right click on the vertical axis and change "Horizontal axis crosses" from automatic to a negative value less than or equal to the minimum expected value of all data on all the charts. Set the Bounds minimum and maximum from auto to that minimum, and the maximum to greater than or equal to the max of all your data.
