I need to put Today's Date into the middle of a sentence.

Something like this. change format in the text function to what format you want.

="start of you sentence "&TEXT(NOW(),"mm/dd/yy")&" end of your sentence"

Try something like

="Today's date is " & TEXT(TODAY(),"dddd, dd mmmm yyyy")&" all day."

You can set the format by changing the blue part
