How do get Outlook Responses to Update Excel Spreadsheet

Hi, I am trying to use a spreadsheet to track responses that I receiving via Outlook. The responses are confidential, so I can't have the spreadsheet shared for users to update. What would be the best way to have the responses entered into the spreadsheet, without it being overly manual? My initial thought was using the voting buttons, then copying from the tracking page, but each user will have a different response.
