How can I highlight or count cells that do not start with the letter K?

I'm trying to figure out the proper formula for a conditional formatting rule (or perhaps a formula entered directly into the cell?) that would highlight (or count, either one is great) each cell in a couple columns that don't start with "K"? This will allow me to figure out what how many international flights a certain tail embarked on in a given month (useful for me). I thank you for any help!

Is there a shortcut key for strikethrough?
Ctrl+S is used for Save. Ctrl+5 is used for Strikethrough. Why Ctrl+5? When you use hashmarks to count |||| is 4, strike through to mean 5.

Thank you!! Wish I knew what those dashes, the 1 and the <> are for. That works well except I need to only count those instances that are shown by the filter as opposed to the entire worksheet. Is there something I can tweak or add to do this that you know of? Thanks for your time!
