I am using excel 2010 and powerpivot both 32bit. I am reading Powerpivot for the data analyst and in chapter six it details the hide and unhide functions that are accessed via an icon by the same name on the design tab of the powerpivot ribbon. That icon is missing from my ribbon and the customize function for the ribbon isn't available in the powerpivot window as far as I can tell. Any ideas as to why it is missing and how to add it?

I don't have such an option either. Assuming you mean "Hide from Client Tools", I just right click the "tab" for the table I want to hide, and there is an option for it there. Or in diagram view -- right click the table and an option is there. Does seem weird there is no ribbon option...
