Form Fillable PDFs and Excel 2013

Hi everyone,

I've got a bit of a weird question that's come about at work and I've found bits and pieces of possible solutions, but nothing definitive.

We use form fillable PDFs to gather proposals (some dropdowns, some free-text, very little numbers) and we need to use that as a viable data source for integration into Tableau. For various reasons creating a form in excel isn't an ideal solution, we don't have Access, and I would rather avoid learning google script language as Google forms aren't an acceptable solution at all (don't ask, my hands are tied).

So I was wondering what options there are to use the form fillable nature of Adobe Acrobat (Version 11 I think? but we might have upgraded by now) to link this information to an excel sheet (bonus points if it can be linked to a Gsheet) so it can be used as a datasource. If that's not feasible, then any possible solutions that might be implemented by someone with modest technical know how (namely me - I can do all this in Excel VBA, but my knowledge outside of that drops off sharply)
Any ideas are welcome
