I am a fairly new Access user. Simple question - I want to create a field called "DPCI" from another field using the MID formula. The new "DPCI" field is going to link to another table.

Is there any way to create my new DPCI field within the table instead of running many queries?

Thanks!

No. Fields in tables can not be dynamically based on fields anywhere.
But, queries can do it. What I think you may not realize is, a query is every bit as flexible as a Table.

Open a new query - add both tables to it. Drag one of the fields over to a related field in the other table. This will form a relationship (a 'JOIN') between the two tables. Click on that line and right-click it choose the right join property. Read the descriptions (best way to describe it)

Then pull each field down into the QBE boxes that you need.

After you're done, view it. If everything is precisely the way you need it, save the query.

From now on, instead of using the tables directly, use the query whether that be to export into something like Excel, or as a recordsource for a Report.
