Excel finding a problem with some content and removing pivot tables

Happy Monday party people. I continue to experience the error below in workbooks where I have my data in a table and multiple pivot tables based on the table data. This happens in multiple workbooks. The workbook will be fine for a day or a few days and then when I open the workbook again I get this error and all of my pivot tables disappear and just the data remains. The table remains intact. I have copied the data into a new workbook, inserted the table, re-created the pivot tables, and again after a couple of days I get the same error.

Just wondering if anyone has dealt with this before and if you have any suggestions. Not sure if it's the table that causes this issue. Maybe I should just stop using tables? Thanks.
