Excel Consulting Suggestions?

Hello - I am considering doing Excel consulting as a business. Looking for any suggestions on how to structure the work/payment. I have done work for one company, charged them by the hour, and am having trouble getting full payment out of them. Should I password protect the sheets until I receive payment in full - if so, how can the customer test them fully?

To advertise, would a website showing examples of work be helpful, or is it something as simple as a business card and advertising on something like Craigslist?

I really enjoy the Excel portion, just looking to be smart on the business side. Thank you!
