Excel Charts: Shifting starting point of chart based on criteria

Hi,

I have the following information:
X Axis: Product (Tomato, Apple, Orange, etc)
Y Axis: Date range (Sept 1-Sept 30, Oct 1-Oct 31, etc)
Values: $ made on each product

I want to create a simple chart that will update information based on a drop down menu selected on another sheet.
For this, I'm using data validation drop down menus (no issue so far).
However, the products had different dates that they were available (Ex. Tomatoes started selling in Jan 2017 and Apples from Apr 2002).

My task is to create a model "shopping cart" that combines two or more products and outputs the combined "$ made" in a time-based line chart.
I want to ensure that the only data displayed is from when both products are available, while maintaining the data validation drop down menu.

Though Tomotoes didn't start selling until Jan 2017, it has blank spaces in the previous date ranges, which pushes the chart to the extreme right end.
How can I fix this?
