Excel 2010 Standard x64 Randomly Crashes on Windows 7 x64

Hi All,
I have a few issues within Excel 2010 X64 version. What we have going on is that when EU are using Excel and they open 2 or more spread sheets Excel goes haywire and gives messages like ( Excel cannot complete this task with available resources. Choose less data or close other applications. ) or they get message stating there's not enough memory . I have tried uninstalling the Office application and reinstalling it still same issue.
Fresh install of the Office application with updates applied
Now this issue is completely random EU stated they never had this issue with Excel 2003.
All PC's setup and specs are the same and brand new system I deployed them in Nov 2010
Specs
HP Pro 3130 Quad Core i7 870 2.93GHz
4GB Ram
500GB HD
Windows 7 Pro x64 ( all system have all latest updates )


This was never a problem on Windows XP 32bit and Office 2003:confused:
