Excel 2007 PIVOT Question - Changing number of ROWs on the Fly...

I currently have 93,643 lines of a CSV file that I run a PIVOT table on and it works exactly as I want it to.

What I am looking to do is from within the PIVOT table be able to adjust the number of ROWs that the PIVOT table uses to calculate its report. Other than having to go in and each time adjust the source data and then refreshing, I want to accomplish this within the PIVOT table itself.

Im using Excel 2007, but also have access to Excel 2010 if need be.

How can you turn a range sideways?
Copy the range. Select a blank cell. Right-click, Paste Special, then choose Transpose.
Can you explain exactly what the setup is? Are you connecting to the CSV, or importing it into the workbook and then pointing the PivotTable at it, or what?

( what do you actually change when you adjust the source data? )

To clarify sorry.
I have manually exported from Sage a CSV file.
The PIVOT table looks at the 93,643 rows of data.

Essentially I am trying to "roll back" transactions to see their impact/movement on the PIVOT table.
