i know veritfically (ie offset($a$1,0,0,counta(....)

but how do you make one horizontally for 2 rows.

also, is it possible to make a dynamic range formula that expands BOTH veritically and horizontally?

Excel Facts

Select all contiguous cells
Pressing Ctrl+* (asterisk) will select the "current region" - all contiguous cells in all directions.
If you know Offset ... you are all set ...

Offset(ref,0,0, nbRows,nbColumns)

You can test

=OFFSET(Sheet1!$A$1,0,0,2,COUNTA(Sheet1!$1:$1))

Hope this will help
