Drop Down Menu Questions

Is there a way for Excel to clear certain cells, depending on a date in the drop down. I do head counts of different areas in the building I work in. I would like it all to be on one sheet. Is there an easy way to do this?

This is what I'm currently working with:

Also, is there a way to make cells dependent on the value of a drop down menu. If I have the days of the week set up in a drop down menu. Is there a =B2(cell with drop down)+1 kind of formula?

B1 can be A1+1 ( but you will need a look up table to return Thursday in B1 if A1=Wednesday
