I have a query from a SharePoint list for around 1000 rows which are refreshed and updated on a weekly basis. Is there a way to track only the rows which change status across a certain week?

SharePoint lists have a column called "Modified" which tracks the datetime an item was modified. Add this to your data model and use it to sort or filter against.
