Delete all records in table

When clicking a button on a form I would like to delete all records in a table then run an append query.

Doing it this way, I hope to retain the formatting of the table while wiping the table clean and updating with the new data.

Yes! Use "0101011" for the weekend argument in NETWORKDAYS.INTL or WORKDAY.INTL. The 7 digits start on Monday. 1 means it is a weekend.
In the same way that you created the append query to add the data crate a delete query and run it before your append query
the code behind the buttun would look like:-

DoCmd.SetWarnings False
DoCmd.OpenQuery "MyDeleteQuery"
DoCmd.OpenQuery "MyAppendQuery"
DoCmd.SetWarnings True
