Date & Time Cell Format for Chart Horizontal Axis

Hi There. I format my cells to the custom format of dd/mm/yyyy hh:mm:ss to use for a chart. It displays the chart correctly for XY Scatter but this type also doesn't recognize it directly as dates (it converts it to numbers which can then be transferred to dates). When I change the chart type to Clustered Bar, it only displays the chart with one large bar, but it does recognize horizontal axis as a date and has the formatting options for a horizontal date axis. When I change the type to text, it displays correctly but I lose any control over how it is formatted. I would really like to be able to use that cell format and set the axis options (bounds and units) with the other chart types.

I can also format the cells as Time and enter in dd/mm/yyyy hh:mm:ss and only the time shows up in the cell (but in the bar at the top of the screen it displays the date). This will format in the charts correctly, but only displays the time on the horizontal axis and note the full date as required.

Can anyone clarify or help on this issue?

I also haven't been able to figure out how to format the cell as date, but enter in date and time, with it only displaying the date - kind of the reverse situation as above.
