Countifs exclude today's date

Hello,

Im trying to create a countifs formula which looks at a cell which includes a letter and month/day, for example A10/31, on my countifs formula Im trying to exclude all entries that have today day. For example, today=10/31/2018, any cell which include 10/31 should be excluded from my countifs. Thank you
